This is a quicker and simpler version of the traditional Spanish tapas style tortilla where we replace the potato with white beans.

Delicious, healthy dessert!
Soooooooo good, filling and packed with protein - no breading or potato.... who'd have thought it would be possible to have fish cakes like this!
I like to make this very spicy, but adjust the spices to your level of tolerance. It's a great recipe that will keep for several days in the fridge and gets better the day after you cook it. We don't miss the tortillas we can't have with it at all! Prep and cook times are approximate - sometimes I leave the soup simmering on the stove while I put my feet up and watch an episode of a favourite show and it doesn't seem to do it any harm.
You can kick up the heat with hot sauce, or add some diced jalapenos to the scrambled eggs.

Submitted by Barbara Ireland Super healthy, satisfies sweet cravings, and packed w/ nuts & protein! I don't like my muffins too sweet, but you can increase the Stevia if you want. Just be careful not to eat too many at once... a lot of fat (albeit the healthy kind) in all the nuts. :-)
