Spinach Quiche
This quiche is also great with tomato salsa or hot sauce. Also, you can reheat it in the microwave on days when you don't have time to make breakfast.

Ingredients
- 8 eggs, beaten
- 8 ounces frozen spinach
- 16 ounces cottage cheese
- 1 bunch green onion, finely chopped (white part only)
- 1/2 cup yellow onion, finely chopped
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon macadamia oil
- salt
- freshly ground pepper
Directions
1. Preheat oven to 325 degrees F (165 deg C). Lightly grease a 9-inch baking dish.
2. Saute garlic in oil for 1 minute, then add yellow onion and mushrooms, and green onion. Cook until tender.
3. Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off all remaining liquid from the spinach. Stir in eggs, cottage cheese, and sauteed onions and mushrooms. Add salt and pepper, to taste. Pour mixture into prepared pan.
4. Bake uncovered in oven for 1 hour, or until eggs are set.

Cottage cheese is the only cheese allowed on the diet, in moderation of course.

Made it this morning with a few variations – added two slices of ham, green and carrots – all chopped and sautéed. Plus some cayenne. Excellent! And I now have breakfasts for 3 more days this week!
I love this! I make a “crust” with mushed lentils or black beans and add ham or turkey and whatever veggies I have leftover. Very flexible recipe, thanks!

Just made this tonight with a few modifications and it’s really good! Instead of spinach (I was too lazy to separately cook some frozen that I had) I used fresh broccoli from one of those steamer bags in the produce section. I chopped some up in really small pieces. I also added in about a cup of crumbled pre-cooked turkey sausage. This can really be made with any kind of veggies, the cottage cheese acts as a good binder. I will definitely be making this each week as it is so easy and is enough to be breakfast for a few days. I’m really not into cooking in the mornings and was getting sick of hard boiled eggs so this is fantastic!
I almost never cook, except for cooking eggs. I was tired of scrambled eggs and had reverted back to breakfast cerial. The quiche turned out delicious. I started with a 1/2 batch and it only took 20 minutes to cook. l added some salsa and it is a treat! I’m back on the diet. Thanks!
this is such a versatile dish and so convenient! It works without the cheese too! I usually throw in canned black beans and sundried tomatos for extra flavor and whatever leftover meat is laying around
Delish! It was especially good when I add a can of tuna (drained). When I did this, I used only 4 eggs and a little less cottage cheese. Also added a variety of other veggies, and some French spices. Would be killer w/ black olives too.
Just tried this last night and for a bachelor, it turned out pretty darn good. Simple recipe and tasty results! This is a nice change up from eating the same meals every day.
