Ingredients
- 2 cans black beans
- 1 lime
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 onion, finely minced
- 1/2 cup chopped cilantro
- 1 1/2 teaspoons chili powder
- 1 teaspoon ground coriander
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher or sea salt
- 1/4 teaspoon cayenne pepper (or chipotle peppers, minced)
Directions
1. Mix all the dry seasonings in a small bowl.
2. Cover the bottom of a large nonstick skillet with the olive and heat to medium. When the oil is heated add garlic and onion to the pan and cook for 3-4 minutes. Monitor the heat so the garlic doesn’t brown.
3. Add the dry seasoning to the pan and stir with the oil garlic and onion mixture.
4. Drain ONE of the cans of beans. Open the other can but leave the liquid in. Add both to the pan and turn the heat up to medium-high. Boil the the beans for a few minutes until soft.
5. Mash with a potato masher until desired consistency and cook to desired thickness.
6. Squeeze in lime juice and top with chopped cilantro before serving.

Made this last night with some thin pieces of flatbread. A definite repeat.
I make my bean dip or “refried” beans in the blender without frying. I drain and rinse the beans (either black beans or red kidney beans) and add back 1/4 c of plain water along with a slug of olive oil, some Realime juice, turmeric, cumin, chili powder, garlic powder, a dash of Worcestershire sauce and/or chipotle sauce and some onion flakes. Buzz the whole thing until nearly smooth and put in a covered heatproof dish and microwave on high for about three minutes. I keep the leftovers in the fridge and eat it almost daily – it’s pretty tasty. A one can batch makes 4-6 servings. I can’t imagine it’s got more sodium in it than anything else I would make with canned beans – like a bean salad or chili.
I just made a batch of this for lunch and it was delicious. A definite repeat. I like how it makes enough for several side dishes. Make now, eat for DAYS! Thank you!
I made this yesterday as today is my first day on the diet. It’s very tasty with a little kick to it. It’s an excellent thing to have to add to any snacks/breakfasts to ensure you get your beans in and feel full.
This will be something I will make weekly to keep in the fridge.
