Kale salad

Servings

2 as an entree, 4 as a salad

Ingredients

  • 1 head Kale washed and leaves torn off main stem
  • 1 tomato, diced
  • 1 avocado, peeled, pitted and cut into rough cubes
  • 1/4 cup sunflower seeds or sesame seeds, or nuts
  • juice of 1/2 lemon
  • 1-2 tablespoon olive oil
  • sea salt
  • dash of cayenne pepper optional

Directions

Place all ingredients in a large bowl. With clean hands, scrunch all the ingredients together – really work it!. This breaks down the kale so it is not so bitter. Enjoy!
