Kale salad

2 as an entree, 4 as a salad
Ingredients
- 1 head Kale washed and leaves torn off main stem
- 1 tomato, diced
- 1 avocado, peeled, pitted and cut into rough cubes
- 1/4 cup sunflower seeds or sesame seeds, or nuts
- juice of 1/2 lemon
- 1-2 tablespoon olive oil
- sea salt
- dash of cayenne pepper optional
Directions
Place all ingredients in a large bowl. With clean hands, scrunch all the ingredients together – really work it!. This breaks down the kale so it is not so bitter. Enjoy!

This was really good and refreshing. Very nice summer dish.
