Breakfast of ‘Champignons’

Keep it simple by using pre-packages sliced mushrooms and canned beans. This is something I can make running out the door and have a wonderful breakfast to enjoy when I get to work - it's that quick and easy! I'm a vegetarian but add whatever meat you'd like to make this more hearty but it's not necessary - filling just like this! Simple and Delicious!!!

Ingredients

  • 1 tablespoon butter you can replace with veggie stock for lower cal version
  • 1 cup mushrooms, sliced
  • 1/2 can Black Beans, rinsed & drained Any type of bean works here, use a variety
  • 1 cup
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon smoked paprika

Directions

Heat butter in skillet on medium heat
Add mushrooms, cover and simmer for a few minutes
Add beans, garlic salt and smoked paprika, cover for another few mins
Add spinach, turn off heat and let wilt.
Clean up, then enjoy or throw in some tupperware to enjoy later! I bring to work all the time and now have to make extra as everyone wants some!

    this sounds wonderful! i’m going to make it for breakfast tomorrow. thanks for sharing…i’m always on the lookout for breakfast recipes, because i don’t eat eggs.
